A Feast in 30 Minutes: Creamy Tomato Pasta

Getting back into the groove of working and also trying to keep the promise you made to yourself of eating healthy and not Uber eating your dinner can be …. challenging. This 30 Minute pasta will help you keep that promise and I also have a vegan version for you.

What I love about this meal is that you usually have all the ingredients in your cupboard. I love making this meal because it budget budget-friendly, you use ONE pot and even though it is a lazy dinner it does not compromise on taste.

Creamy Tomato Pasta Recipe

Serving Size: 4

  • Ingredients:

    • 1 pound of your favorite pasta

    • 2 tablespoons olive oil

    • 3 cloves garlic, minced

    • 5 Peeled tomatoes, 1 can (28 ounces) crushed tomatoes

    • 1/2 cup heavy cream

    • Italian dried herbs

    • Salt and pepper to taste

    • Optional: Red pepper flakes for a hint of spice

  • Instructions:

    1. Boil the Pasta:

      • Bring a large pot of salted water to a boil.

      • Cook the pasta according to the package instructions until al dente.

      • Drain and set aside.

    2. Prepare the Creamy Tomato Sauce:

      • In a large skillet, heat olive oil over medium heat.

      • Add minced garlic and sauté until fragrant.

    3. Create the Creamy Base:

      • Pour in the crushed tomatoes and let them simmer for a few minutes.

    4. Season to Perfection:

      • Sprinkle in oregano, salt, and pepper.

      • Let it simmer for 5 minutes, allowing the flavors to meld.

    6. Serve and Garnish:

      • Garnish with fresh basil leaves and a generous sprinkle of grated Parmesan.

  • Vegan Version:

    • Ingredients:

      • 1 pound of your favourite vegan pasta

      • 2 tablespoons olive oil

      • 3 cloves garlic, minced

      • 1 can (28 ounces) crushed tomatoes

      • 1/2 cup canned coconut milk or almond milk

      • 1 teaspoon dried oregano

      • Salt and pepper to taste

      • Optional: Red pepper flakes for a hint of spice

      • Fresh basil and nutritional yeast for garnish

    • Instructions:

      1. Follow the same steps for boiling the vegan pasta and preparing the creamy tomato sauce as outlined in the original recipe.

      2. Substitute heavy cream with canned coconut or almond milk for a luscious vegan twist.
