The Gut Boosting Summer Salad, a summer salad comes in many different versions depending on one’s taste. My favourite summer salad is a crispy leafy one, full of colour and packed with nutrients.

The kale summer salad is full of fibre , water and vitamin K because of the , kale. The honey candied walnuts help promote the growth of healthy gut bacteria. The peaches not only add that pop of colour you want in a salad , they feature in this salad because of the smooth digestion they help with in the gut . The blueberries, feta cheese and olive oil bring it all together into a gut healthy summer

Heat olive oil on medium heat add the walnuts, paprika & honey. Cook walnuts stirring constantly, until all the walnuts are coated and sticky, making sure there is no liquid remaining.Transfer walnuts into a baking sheet or plate to cool down.
I love to massage my kale with olive oil and lemon juice, it makes it tender and the lemon juice adds a nice tanginess. Assemble the kale, peaches, walnuts, blueberries and feta cheese a large bowl. Serve and enjoy.
