Ingredients:
1 pack of puff pastry (thawed if frozen)
250g mushrooms (sliced)
2 cloves garlic (minced)
100g Danish feta (crumbled, or substituted with goat cheese or ricotta)
100g mozzarella (shredded, or substituted with cheddar or provolone)
1/4 cup green olives (sliced, optional)
1 red onion (thinly sliced)
Olive oil (for drizzling)
Salt and pepper to taste
Instructions:
Preheat Oven: Set your oven to 200°C (400°F).
Prepare Mushrooms: In a skillet, heat a bit of olive oil over medium heat. Add the sliced mushrooms and minced garlic, cooking until the mushrooms are golden brown and the garlic is fragrant. Season with salt and pepper.
Assemble Tart: Roll out the puff pastry on a baking sheet. Spread the cooked mushrooms evenly over the pastry. Sprinkle the crumbled Danish feta and shredded mozzarella over the mushrooms. Add the sliced green olives if using.
Add Onions: Arrange the thinly sliced red onion on top.
Bake: Drizzle a bit of olive oil over the tart. Bake in the preheated oven for 20 minutes, or until the pastry is golden and the cheese is melted.
Serve: Allow the tart to cool slightly before slicing. Serve warm.
